Mini Ginnie is a soft, gin-washed, crottin-style, cow’s milk cheese. Pudgy texture, herbaceous, and citrusy, with lemon, lime, yeast, and buttermilk flavors. It’s a perfect size for one or two people.
Why Ginnie? Because we wash the cheese in Gin! It is also an homage to the late Ginnie Tate, the goat lady of Goat Lady Dairy, in North Carolina. Cheesemaker Sarah was an intern at Goat Lady Dairy in 2007. Ginnie, her brother Steve Tate, and Goat Lady’s cheesemaker Carrie Bradds mentored Sarah and helped give her the confidence to start Briar Rose Creamery. Every cheese tells a story.
